NVWE Notes: Gorgeous, vibrantly zesty and bone dry, the nose of this decidedly Champagne-like bubbly is a focused mix of sweet apple, white peach, apricot pit, honey, croissant and lemon sorbet scents. It unveils a tiny yet super energetic mousse and proves as elegantly flavorful as hoped on the palate, delivering sharply focused flavor suggestions of green apple, white peach tart, wild strawberry, apricot pit, lemon, honey and pastry crust. Airing amplifies these elements, yet the wine remains tightly restrained and classically-balanced to the end of its notably long finish. Terrific now, it may be more so in a few more years. 1200 cases produced.
