Deep garnet-purple colored, the 2007 Cabernet Sauvignon Beckstoffer George III Vineyard sings of creme de cassis, baked plums and cherry preserves with touches of dried sage, tilled soil, cigar box and camphor. Built like a brick house in the full-bodied mouth with firm, grainy tannins and wonderfully refreshing acid cutting through the rich, concentrated black fruit preserves, it finishes with a compelling herbal lift. Complex and layered, with a distinctive core of spicy vanilla, mocha, black licorice and currant flavors, smoothing out nicely and ending with a long, full finish, showing touches of herb and olive.
