It is as youthful on the palate and full of creamy vanilla, toast, meringue and other oaky spice in harmony with stone fruit, goldenberry and fresh herbal flavors that are palate coating and linger well. Built for service with richly sauced sea food and white meat entrees, it will likely not achieve its full expression for another twelve to eighteen months.

Nicely balanced and refreshing, the 2021 Jayson Sauvignon Blanc marries notes of fig and melon with a hint of stone fruit, capping all that off with some grapefruit on the finish.
