This is a very rich Chablis that seems almost too plush at opening, although minimal airing brings forth balancing notes of minerality and zest. The aromas are a medley of baked green apple, lemon zest, slate, flint and seashell poised above a more tightly wound core of honeyed peach. Lemon cream, baked apple and honey flavors are sharply contrasted by flintly minerality on the palate, and the balance created carries through a lingering, food-balanced finish. Ready to enjoy, it seems built for service with coquilles St. Jacques, sauced lobster and the like.
