Behrens 2015 Cabernet Sauvignon Moulds   

NVWE Notes: Deeply rich, complex and nicely-evolved despite its powerful underlying concentration, the nose of this opulent wine layers a veneer of laurel, dried sage, toffee, sweet tobacco, clove, black olive and black peppercorn over a juicy-jammy core of black cherry, Italian Maraschino cherry, black raspberry, pomegranate syrup and violet. The confluence of fruit zest, tannic grip and mineral undercurrents brings a piquant counterpoint to the savory spice and textural creaminess on the palate, seeing to it that the flavors of Italian maraschino cherry, black cherry, cherry pit and pomegranate syrup never yield center-stage nor lose their focus. At the finish, those flavors linger in beautiful harmony with a rush of sweet-savory spice topped by accents of rosemary and sage. A grand companion to dark roasts and the like, it should grow ever grander over the next five to eight years. 100% Cabernet Sauvignon, 114 cases produced.

One of the highlights in this range, the 2015 Cabernet Sauvignon Moulds Vineyard is a total knock-out. Rich, sumptuous and super-expressive, the 2015 Moulds has so much to offer. Crème de cassis, mint, lavender, spice and blueberry pie all give the Moulds a decidedly cool, savory personality that is typical of the wines from Oak Knoll.
